
While zuppa Toscana just means Tuscany soup, it is known in the USA from Olive Garden as a kale based sausage and potato soup. This isn’t far off from my own recipe, but I just call it winter soup, or minestra invernale. I also just call it sausage soup. It is a really simple dish. It is in my personal opinion better than the olive garden recipe, but theirs would not be bad if you do not have access to the Italian ingredients. Here is how to make it:
Ingredients Needed:
1 Ball of Burrata (for topping)
500g sausage (spicy preferred)
500g ground beef
1000g Potatoes (red is best, any will do)
Spoonful Rosmary
2 large spoons Salt
Dash of Pepper
Spoon of Paprika
Let your ancestors tell you to stop with the Basil
A spoon of Coriander
Sprinkle of Cumin
Heaping of Onion
Heaping of Garlic
Pinch of Kale (topping)
Instructions:
- Cook the sausages and ground beef until brown. You can add the seasonings here too for extra flavour.
- Boil the potatoes (sliced into rounds) for 20 minutes
- Season the pot with potatoes with all seasonings
- Add in the meats to the pot and remove from heat
- Rest 5 minutes
- In each bowl of the soup, add a topping of kale or burrata as desired.
