
There are many ways to make this but the general ingredients never change. You can use any type of tomato and cut the mozzarella any way you want. You can arrange it in a circle or pile in on a plate. However you enjoy this dish, it is always welcome at my table and eaten year round. I will never get sick of this and could eat it everyday.
Here is how to make it:
Ingredients:
Tomatoes
Mozzarella
Basil (fresh is best)
Balsamic vinegar (you can use a balsamic glaze which is sweeter)
Olive Oil
Salt (you can add pepper too)
Instructions:
- Cut the tomatoes, either in half if cherry or grape tomatoes or slices if Roma or salad tomatoes.
- Top with mozzarella with in slices or chunks. You can also buy the cherry cut mozzarella balls.
- Basil goes on top in small bits or whole leaves depending on the size you have chosen for the other ingredients.
- Oil goes on before the balsamic vinegar or glaze. Then salt last.

I want to try this recipe. It looks awesome. I am however, not crazy about fresh tomatoes – what could I substitute to keep a delicious flavor?

You can substitute with any other vegetable. I recommend cucumbers since they do not change the overall flavour of the dish.
