I would say that there is one meal I make that is fully responsible for both of my engagements. I cite this steak as the reason men so often propose to me. It couldn’t be my winning personality or my stunningly good looks…or my humility. It has to be the steak.
I learned this recipe years ago when I was just 19 or so. And every single time I make this meal I am in love with the food, the wine, myself. It also might be the effort it takes. It isn’t exactly an easy meal to make but will change the way you see food. Maybe I am exaggerating, but it is like seeing in color for the first time. Ok. I am exaggerating.
Basically you take a cut of sirloin and season it with a few seasonings…I can’t give away all my secrets or the dating pool will dwindle and I’ll be single forever. Then you stick a lot of butter on top. Like enough to give the man diabetes. If you are looking to be a black widow, make this often. It’ll clog their arteries.
For legal reasons: THIS IS A JOKE.
Now you take the butter and you season it again. So it is the steak in a baking pan, seasoned, topped with butter and lightly seasoned again. Then throw that into the oven at broil for about 4-6 minutes on each side. Rotate the steak only once seasoning again when you flip it.
While the oven is preheating and the steak is prepped, start heating up some potatoes in boiling water. When they are soft enough to mash, mash them into a paste. We are making the loaded mash here. Add milk and more butter. Remember we are trying to clog up the arteries and experience bliss. Add salt and pepper to taste. Mix in that cheddar cheese. YUM. bacon bits? maybe. Top with sour cream and chives.
While the potatoes are finished boiling and have been mashed, you need three arms here. Really work for that ring. Don’t you want 3 karats??? c’mon hop to. Now, throw some corn into a pot on the stove and start warming it up in, yes I know, more butter. We are trying to clog the arteries. EYE ROLL. How many times I gotta say this?

Season the corn and butter with salt and pepper. Keep this part simple since we are loading the steak and potatoes. This is the final step and should ideally be heated right when the steak is being flipped. Everything will come together perfectly and the WINE. THE WINEEEEE. This is the most important factor. You need to pick a good wine. I typically go with a red Zinfandel but a merlot or chianti will do as well. You need something dry. Even a syrah would work.
Have the table set. Have the plates ready. And pour the wine when they sit down. This is how I got engaged two times. It didn’t work out because I am crazy obviously. But nobody said I can’t cook. No one ever said I can’t cook. But who needs therapy when you have the meal that will change your life. If you are vegetarian, this may not work for you…Good luck.
